Lemon Madeleines Recipe

We have had a request! As you may know, our family loves madeleines with our tea. We had a request from one of our customers to share our lemon madeleines recipe and we are finally getting to it. Sorry it has taken so long Pam C.! Try this recipe and enjoy some delicious madeleines with your favorite cuppa.

Lemon Madeleines Recipe


  • 3/4 cup Unsalted Butter + 2 Tbsp for greasing pan
  • 3/4 cup All Purpose Flour + more for dusting pan
  • 4 Eggs, Room Temperature
  • Pinch of Fine Grain Sea Salt
  • 2/3 Cup Sugar
  • Zest of 1 Large Lemon
  • 1 tsp. Vanilla Extract
  • Powdered Sugar for Dusting

In a small pan, melt butter over medium heat until slightly browned. Skim off solids in butter or pour through a fine strainer and discard solids. Set butter aside and cool to room temperature.

Generously grease two madeleine pans with the 2 Tbsp. butter and dust lightly with flour. Tap out excess flour.

Using a stand mixer with a whisk attachment, whisk together the eggs and salt on medium-high speed until eggs have doubled or tripled in size, approx. 3 minutes. Gradually add sugar while whisking until mixture thickens, approx. 2 more minutes. Gently fold in vanilla and lemon zest with a rubber spatula.

Sprinkle the 3/4 cup flour into mixture and gently fold in. Add the melted, room temperature butter and gently fold in until just combined. Do not overmix.

Bake at 350°F until madeleines are golden brown around the edges, approx. 8 - 10 minutes.

Makes 24 madeleines.
